Description

Dairy-free polysaccharide – thickener/stabilizer, emulsifier. Used for foaming, emulsions, chewing candies, used as filler. Deva: quantum satis (as needed), normal dose for stabilization and thickening is 1 – 4.5%. Usage: blending dissolves in cold or hot mass. Not to be used with alcohol or fats. Ingredients: thickener and emulsifier: arabica (acacia) resin (E414). May contain SOY, EGG, WHEAT, GROUNDNUT, SESAME, CELERY, MUSTARD and SULFITE particulates. Also available in 10 kg packaging upon order. Produced: Spain Recipe: Soft gum candies. Boil sugar syrup up to 121°C – 0.41 kg sugar, 0.41 kg glucose syrup, 0.31 kg concentrated fruit juice or puree (if necessary, add citric acid). Mix and let it mature – 0.31 kg water with 0.045 kg gelatin and add 0.31 kg arabica resin. Add this mixture to the syrup, stirring until melted. Pour into starch-dusted molds and dry in a hot room.
