Description

Uses to thicken fruit and vegetable masses, for making marshmallows, and — to avoid animal-derived gelatin. Gives a soft structure, ideal for sugar-free fruit and berry pastes (the riper the fruits, the weaker the gel — more agar is needed). Can be used for all types of masses with water content above 80%. Dosage: 2-3 g/kg, max 15 g/kg. Heat the mass to 90°C, use immediately. Can be heated and used again as many times as needed. Sets at 60°C. Ingredients: thickener: agar (E406), dextrose. May contain SOY, EGG, PEANUTS, NUTS, SESAME, CELERY, MUSTARD and SULFITE particles.
