Agar is obtained from algae; it is a plant-based alternative to gelatin – suitable for vegetarians and vegans. Use: 1 pack is intended for 500 ml of liquid, corresponding to ~6 sheets of gelatin (if using acidic liquid, double the amount of Agartine!); for cold masses – 1 pack contents with at least 100 ml of liquid boiled for 2 minutes, then stirred into the cold mass (400 ml), poured into molds. If added to whipped cream – allow the boiled solution to cool slightly.
For hot masses: 1 pack contents stirred into 500 ml of cold liquid, brought to a boil and boiled for another 2 minutes.
The prepared mass should be cooled to set in the cold for 1-3 hours.
The typical aroma of agar is present only during heating; cooled foods have no such taste/aroma. After boiling agar sets at +35°C. Ingredients: maltodextrin, leavening agent: agar E406 (27%), thickener: guar gum E412. May contain EGG, MILK, SOY, PEANUT particles.
